Shhhh, Don't Tell Chipotle

I found the recipe for Chipotle's awesome chicken marinade. Here it is, and you're welcome:

  • 1 (7 ounce) can chipotle peppers in adobo sauce 
  • 2 teaspoons cumin powder
  • 2 tablespoons fresh oregano, chopped
  • 6 cloves garlic
  • 2 teaspoons salt
  • 1 red onion, quartered
  • 1/4 cup oil (I used olive oil)

 I marinated the chicken overnight and grilled it on Sunday.

Combined with rice, cilantro, black beans seasoned with cumin, garlic and salsa, freshly roasted corn, sour cream, shredded cheese and more cilantro, it was very similar to the Chipotle bowl. Though a tad spicier.  Also, if I'd had the time, I would have made the corn salsa. But I didn't have time for that and it turned out just fine. Here it is:

thirsty, cracked mud
trampled by the glare

escalating darkness
like a contraction
the end, terrifying

my truth is here
raw and public
flogged

forever

separatism


crushing the isolation
